Photographer, blogger, and friend Cat Pennenga and I share a love of trying relatively simple, yummy recipes and sharing them through photos. Her recent food posts have made my mouth water and had me missing recipe blogging, and since I’ve been itching to try some of Heidi Swanson of 101cookbooks.com‘s new recipes, we decided to make some food, take some photos, and eat together! Fun and yum.
We went with a lemon and fennel theme – two of the best ingredients ever. Mmm. Luckily, Heidi had two lemon-fennel (or anise) recipes that were perfect for lunch on a hot summer day (which it seems everyone’s feeling these days, not just those of us in sticky Florida).
The first dish is a a version of Heidi’s Shaved Fennel Salad, the recipe for which is also in her latest cookbook, Super Natural Every Day (why do I not own this yet?). We made some adjustments due to availability (i.e., gross-looking arugula at the supermarket) and our whims.
Shaved Fennel Salad, serves 2-4
optional crostini side: Drizzle a little olive oil and sprinkle a bit of salt over 2-3 sourdough slices. Broil for about two minutes – but watch it carefully; they burn fast! Then slice into cracker-sized strips.
For the salad, instead of using raw zucchini, we suggest tossing the coins in a little olive oil and salt and broiling them for about 5 minutes. Then, toss all of the ingredients together and eat!
The next recipe is super simple and so deliciously refreshing – as a drink (or cocktail) or icy sorbet. Such a perfect, healthy summer treat!
Lemon Anise Slush, serves 4-6
Blend it all together. Serve immediately as a slushy drink (and spike with the anise-flavored Sambuca, if you want to take it up a notch), or freeze for a couple hours and serve as a sorbet-like treat. Drizzle a bit of honey, and sprinkle some anise seeds on top before serving.
Enjoy!
And here’s a little of what was going on behind the scenes:

Emily and Matt got married in June on Longboat Key. Although they’re a young duo, Emily was such an organized bride – prepared, calm, focused, and the two of them are visibly so in love.
This is a collection of some of my favorites from Emily and Matt’s first look, ceremony, and portraits (with a beautiful near-sunset sky before the rain started dumping):

Amara is the cousin of baby Emma (here she is at 8 days old), and the cuteness definitely runs in the family. Both girls are adorable.
We did Amara’s belated one-year session at the family’s beautiful home on the water – so many pretty and inspiring spots to shoot! And such a sweet little one…
I love my job. 🙂

Cat (of Cat Pennenga Photography – check out her beautiful work!) asked me to photograph her family on their gorgeous wooden boat before they sell it:
…And we did a little lovebirds’ shoot of the happy couple (and their pup, Rufus). Cute tidbit – Cat and Greg left their wedding on this boat. 🙂
Photographing love is fun. ♥

Wish I could give this birthday girl a hug today, but instead, I have to wish her (and her parents – congrats, Russ & Jordie!) a very, very happy first birthday by posting a few photos of the poolside babe – and hopefully singing to her over Skype later!
Happy, happy birthday to scrumptious Maddie Cakes! ♥

Misty and Dusty were married Friday evening on Lido, and although the ceremony had to be indoors due to the crazy, hurricane-like weather, we got to spend some time outside and on the beach yesterday morning for a sunrise “trash-the-dress” shoot all around Siesta. The newlyweds are from Illinois, but Misty spent many vacations in Sarasota growing up and, since meeting Dusty, has made it a special place for him, too.
Misty is no doubt absolutely stunning and thus a ridiculously gorgeous bride, but she is also so much fun – and she and Dusty were amazing sports for yesterday’s shoot. Not sure I’ve met many brides who would dive into the ocean (and then a pool) in their wedding dresses – and let me photograph them doing it! Dusty jumped right in with her – and made her laugh all the while, which seems like a regular occurrence in their relationship (him making her laugh, not the diving into water in wedding attire).
Congratulations, Misty and Dusty!
Wedding photos to come! Stay tuned. 🙂

Peggy and Tom are about to celebrate their 50th anniversary – WOW. 50 years!! Their four sons and their families gathered from all over the country to celebrate, and one of their sons, Jim, and his wife Julie of SunCoast Organics, the amazing home delivery service for fresh, organic produce (and milk, eggs, nuts, etc.), asked me to help them commemorate the occasion with photos. They were an easy bunch, because they clearly have so much fun together – it’s infectious and a joy to photograph!
How sweet are these two?
And the adorable grandkids (thanks, Jim, for being hilarious and cracking them up!):
We took some individual family photos, too. Here are some of the SunCoast Organics crew. (Ainsley is hilarious and such a ham!)
Congratulations to Peggy and Tom on such an incredible and inspiring milestone, and thank you to the whole family for including me in the celebration!
